Day 51 – RSD 70!!

What’s up with the Garmin Connect site? My run failed to upload this evening, which bugs me! So, I snapped a picture of my watch with my miles and time. Today is Friday! Yes, yes it is. K, so as promised here is a great recipe for you guys to try out that my wife made for me tonight. The sauces are absolutely fantastic! Very, very good. This one is a bit of prep time and takes a while to make but once it’s done it will last a couple of days. It’s filled with veggie goodness.

Here are the ingredients

For the potatoes:
1 1/2 lbs yukon gold potatoes, cut into 1/2 inch pieces
1 tablespoon olive oil
Fresh black pepper
1/2 teaspoon salt

For the Enchilada sauce:
4 teaspoons cumin seeds
1 tablespoon coriander seeds
1 tablespoons olive oil
1 yellow onion, diced medium
1 jalapeno pepper, seeded and chopped (use 2 if you like more heat)
6 cloves garlic, chopped
2 teaspoons dried oregano (Mexican, preferably)
2 28 oz cans whole tomatoes
1 teaspoon salt
1 teaspoon agave nectar

White sauce:
1 cup cashews, soaked for at least 2 hours
3/4 cups water
1/2 teaspoon salt
2 teaspoons cornstarch

For the filling:
1 tablespoon olive oil
1 onion, quartered and thinly sliced
2 cloves garlic, minced
8 oz cremini mushrooms, thinly sliced
1/2 teaspoon salt
3 cups cooked pinto beans (2 15 oz cans, rinsed and drained)
2 tablespoons fresh lime juice

For assembly:
18 8 inch corn tortillas

Optional toppings:
Pepitas
Fresh chopped cilantro

Also, I am celebrating 70 days of running today and enjoying all the benefits of running and living a plant based lifestyle!  Just one of the many benefits other than low lipid levels, low BP, increased energy and recover time is you become very lean and melt away all the excess fat!  Also another little side effect is that your flag still raises as if you were a teenager!  LOL!  Figured I would toss that in there since Nathan made that amazing run diagram!  Which was just AWESOME btw!!
